Herbed Bistro Salad
It may not look like much, but these delicate greens are elite! A mix of crunchy & tender lettuce gets tossed with quick =-pickled shallots, fresh herbs and a bright lemon dijon vinaigrette.
I’ve never been one to crave a salad…probably ever in my life. But my GOD if this one didn’t alter my brain chemistry - I find myself thinking about it more than I’d like to admit.
This vegetal plate is my riff on a French bistro salad, and it’s the perfect entry to a heavy main course. But this salad can also totally stand alone (I’ll give you some ways to bulk it up down below)… I wanted to specifically mention this so it has a chance for its well-deserved spotlight moment.
This salad combines crunchy romaine with super tender butter lettuce for easy-to-eat bites, and we toss it up with 30-minute pickled shallots, fresh dill and chives, and a lemon/dijon/honey vinaigrette situation.
Honestly, it’s totally basic and doesn’t even seem particularly exciting as I write this? But maybe that’s why it’s so delicious. It’s incredibly easy to make, we’re not doing anything fancy, and yet I truly think you’ll be making this on repeat all year round.
P.s. this would be super delicious alongside the panko salmon + orange farro for a weeknight meal.
